His parents both worked as chefs, and over the years, his family owned and operated several restaurants. That environment shaped his skills and passion early on. Today, he continues that legacy, even partnering with family members to keep the tradition alive.

What’s on the Menu?

While tacos are the star of the show, Calaveras offers much more. They specialize in birria and carnitas—two standout options that highlight authentic cooking techniques.

  • Carnitas: Slow-cooked pork, braised in its own fat for hours until it’s crispy on the outside and tender on the inside.
  • Birria: Traditionally made with goat in Mexico, but in Javi’s hometown of Tijuana, it’s made with beef—specifically brisket—for a rich, flavorful twist.

If you’re visiting for the first time and want something authentic, Javi recommends going straight for the birria tacos. Add avocado, pickled onions, and you’ve got a must-try combo.

For the more adventurous eater, there’s also nopal (cactus leaf), which surprises many customers with how delicious and satisfying it is.

    • Green (tomatillo, jalapeño, garlic, and vinegar)

Javi’s personal favorite? A carne asada taco topped with beans, avocado, and green salsa.
